Every meal must come with at least 1 veggie dish. To complete my lunch menu; Ayam Goreng Tumbar Jintan & Sambal Tumis Sotong, I cooked Stir-Fried Luffa (Petola Goreng), another tasty dish yet so simple to cook.
STIR-FRIED LUFFA/PETOLA
Ingredients:
- Luffa - skinned & cut diagonally into 2cm pieces
- Shallots, garlic, dried shrimp, bird chillies (if you like hot) - pounded
- Chicken stock
- Corn flour - mix with water
- Sugar & salt to taste
Method:
1. Heat the oil in a wok
2. Stir in the pounded ingredients until fragrant & golden brown
3. Add the chicken stock, followed by the sliced luffa, sugar & salt to taste
4. Reduce the heat and cover the wok to soften in the steam for a few minutes
5. Add corn flour to thicken the gravy
6. Remove the heat and serve while hot! emmmm delicious :-P
