I love Marinara spaghetti so much!
[errkk! technically I love all kind of pasta dishes...heheee]


Today I cook my own marinara spaghetti with fresh live clams I bought by the seaside... oowhhh! It turns out to be so marvellous!


The ingredients:

- Fresh clam/mussel/prawn/squid or any seafood
- 2 yellow onion
- 3 garlic
- 1 bay leave
- Oregano and basil [fresh or dried]
- 4 fresh tomatoes
- 1/2 canned chopped tomatoes
- 1 can Prego spaghetti sauce [traditional garlic & mushroom] - optional for more flavour
- English parsley for garnish
- 1 pack spaghetti
- Salt & pepper


Methods:


1) Cook spaghetti in a boiling salted water until al dente. Rinse and put aside.
2) Heat oil in a pot and add onion and cook until softened.
3) Add garlic and bay leave and cook for 2-3 minutes until fragrant.


4) Add chopped tomatoes, canned tomatoes and Prego sauce. Simmer 20-30 minutes until slightly thickened. Stir occasionally.

Mentalnotes:  I add crushed/chopped canned tomatoes because local tomatoes have less flavour and juice.


5) Season well with salt and pepper. Add some oregano and basil.


6) Add the clams and cover with lid. Cook for 5-8 minutes.


7) The clams are cooked when they are all open.


ooooo...lalalaaaa! Super marvellouss deliciouss marinara sauce is done!


Ready to serve!
