Redd velvett cake lagi :) Saja lar, sebab nak habiskan stock buttermilk. Tapi hari nie kami buat version cupcake plak. Double the ingredients if you wish to make 24 bijik okay...maklumlah nak bagi jiran tetangga sket kan...heheee


Makes 12 cup cakes


Dry Ingredients:
125g cake flour or self raising raising flour - sifted
1tbsp unsweetened cocoa powder - sifted
1/4tsp baking powder
1/4tsp salt

Method: Add all in a bowl and whisk to mix well.

Wet Ingredients:
1cup buttermilk (100ml)
Red colouring

Method: Mix all and stir till well incorporated.

Other Ingredients:
1 large egg
57g buter [room temp]
150g caster sugar
1tsp vanilla essence
1tsp baking soda
1tsp white vinegar


Method:

1) Beat butter until creamy and smooth
2) Add sugar and continue beating till fluffy
3) Add egg and vanilla essence. Keep beating till well incorporated


4)  Add dry and wet ingredients alternately. Start with wet ingredient.


5) Continue beating till the colour mix well with the batter


6) Add the dry ingredients


6) Keep beating till well incorporated. Repeat the process until you finish the dry and wet ingredients.

MUST DO IT QUICKLY
7) Mix the baking soda with vinegar. It will form bubbles. Quickly add it into the batter!


8) Using spatula, mix the batter gently.
Scoop the batter 2/3 full into the cupcake paper using ice cream scoop!


9) Bake 180C for 20-30mins or until cupcake is cook
10) Leave to cool


Preparing the Cream cheese icing


1) Beat 227g cream cheese until creamy and smooth.
2) Add 1/2tsp vanilla essence and 60g sifted icing sugar. Continue beating.
3)  Add 160ml whipping cream gradually and beat till soft peak [optional]
4) Using the piping bag, deco your cup cakes as you like! Done!!

Tips: Whipping cream will hold the shape of the icing nicely!
