Apfelkuchen --- A German apple cake. Delicious!!!

Before that, let's say it in German correctly :
AP --- FEL --- KU ---QHEN.

Jangan pulak cikjah dok cakap kuchin..kuchinn....hahaaaa

Ingredients:

6-8 sweet apples. [kami guna Apple Washington 4106 and Gala]
Juice of 1 lemon
250g flour -sifted
2tsp baking powder
1/2 tsp salt
150g butter -softened
230g sugar [divide 50g and 180g]
3 eggs
2tsp vanilla extract
Zest of half lemon
160ml milk
160ml buttermilk

Methods:

1. Peel and core the apples. Slice them in two. Toss with lemon juice and 50g sugar. Leave for an hour. This process will draw out some of the water from the apples. Keep the juice* for a later use.

Notes: If you skip this method or not long enough, the apples will leech in the cake while baking and it will make the crumb gooey. It's okay if you like a custardy inside the cake.

2. Whisk the flour with salt and baking powder in a bowl

3. Combine eggs with vanilla extract in another bowl. Stir them a little with a fork.

4. Cream the butter and 180g sugar in a mixer until fluffy and pale.

5. Add egg mixture into the batter. Continue mixing.

6. Add lemon zest and flour mixture. Continue mixing until well combined.

7. Add the milk and buttermilk. Don't beat the batter too much. Just enough to ensure all ingredients are well combined.

8. Line the buttered 10 inch baking tin with parchment paper. Pour half of the batter. Arrange sliced apples.

9. Pour the rest of the batter into the baking tin. Lay the apple halves, score the tops for decorative.
Bake about an hour until deeply tanned in preheat oven [190 Celsius] or until the cake is cook.

Tara!!! Yippiee! I made an Apfelkuchen.

Notes: Put the leftover juice* in a saucepan. Add some sugar and cook until you have a thick delicious syrup. Use it to glaze the apples while cooling of the cake on the rack.

Isn't she gorgeous?
