I've always wanted to bake a carrot cake with mini carrots on top of it! Super cute :)
Finally, yesterday, I got a chance to bake my first delicious carrot cake in my kitchen. Yeyyyy!!!

I've never been to any baking or cooking classes actually, but I learned from the tv programmes, books and internet. Alhamdulillah, semangat dan keinginan untuk mencuba masak hatt tu, masak hatt nie sentiasa ada....chee..cheeee...Ahaks!

Banyak sangat tonton AFC channel. Kalo banyak tengok AFC programmes sampai bleh masak & baking cake yang lazatsegakk [aiceh!], bayangkan kalo banyak tonton program nyanyi-nyanyi kat tibi tu, agaknya pandai nyanyi macam Siti tak? heheee...uish! laqo taw....lol

Standard carrot cake recipe is using oil instead of butter. So, I used canola oil...but still there are recipes that use butter instead of oil.  Apa yang kami prasan, bila guna minyak, kek lebih lembap dan stay fresh for 2-3 days even outside the fridge.

The Ingredients:


320g carrot -peeled and grated
1 cup walnut / pecan [optional] -chopped
260g self raising flour
300g sugar
4 eggs
1 cup canola oil [or sunflower/corn oil/vege oil]
1tsp ground cinnamon
1 tsp vanilla essence

Methods:


1) Beat eggs till fluffy
2) Add sugar gradually and beat till pale


3) Add vanilla essence
4) While mixer is running, slowly add canola oil
5) Add flour and mix till just incorporated


6) Add carrot and walnut. Mix well with spatula


7) Pour the batter into the greased baking tin [ I used 9" baking tin]. Baked for 30-40 minutes at 180C or until when you insert a skewer into the cake and it comes out clean.


8) Leave to cool


9) Remove the parchment paper


10) The carrot cake is ready or continue with cream cheese frosting if you like

Cream Cheese Frosting

Beat 50g butter [room temp] and 250g cream cheese [room temp] till creamy.
Add 115g icing sugar and 1tsp vanilla essence. Mix  well till incorporated. Ready to be used!

I love it! sebab akhirnya sampai hasrat di hati nak hias cake with mini carrots. Takkan lar buat red velvet cake nak hias carrot cake pulak kann.....lol 
Kena tunggu giliran carrot cake masuk dapur baru bleh tekan icing bentuk carrot :)


I just coat the cake with cream cheese lightly because  tak nak terlalu tebal dan tak nak terlalu 'bersalah' sebab takut TER-makan banyak cheese.....heheee
